This time we'll go to one private winery in Germany, have an excursion
there and know some interesting and even unexpected things: for example
what is done with excess wine.
In fact climate of Germany in general does not so good for vine, that
is why only in some south-east regions of the country people make wine.

Wooden tuns are mostly used for red wine. Oak smell contributes to a
good taste. These tuns are more than 100 years old and they do not
change the taste of wine anymore. New tuns are used only for two years
and only for some sorts of wine. After long period of use old tuns are
usually sent to Scotland where people use them for whiskey storage.
Each wooden tun contains 125 litres of red wine. All the tuns are made
of oak and only two are from chestnut, they are used for white wine.
Such tuns should be constantly filled or the wood will lose its valuable
properties. The elements contained in the wood enrich the bouquet of
the wine, in a tun wine gets old and absorbs oxygen. Size of a tun is
also important: the bigger a tun is, the less impact of the wood on
wine, the slower wine oxidizes. In a big tun wine is getting old for a
long long time.
Tanks made of stainless steel are getting more and more popular now,
cause wooden tuns are rather expensive and complicated in storage and
production. However the effect of ageing in a wooden tun cannot be
compared to anything! Stainless steel tanks are mostly used for white
wine.
German wine makers buy new oak tuns and send them to Irland and Britain
free of charge for whiskey storage. 10 years later, when the tuns don't
give smell anymore, they are taken back.
Germans prefer white wine. An ordinary German drinks about 26 litres of wine a year.
According to the German legislation the amount of wine production is
restricted to some limits, and a wine maker has to destroy excess wine.

Lind delivers its wine to different countriesL Finland, Japan, China
etc. These boxes are the order from the Finnish government for Christmas
holidays.
Some people order wine postal delivery.
Mr. Lind himself - a wine-maker in the 15th generation. Those who have
some fame in wine-making have good profit, newcomers have no many
chances to achieve something in this business.
Mr. Lind controls the quality of his wine himself. Every day he tastes
16 sorts of wine! He owns 20 hectares of various vines but sometimes
it's not enough and he has to buy more from his neighbours. In the wine
of Lind there is only 60-70% of Lind vine.
These eight boxes contain 250 bottles of wine, the oldest bottle is
more than 100 years. One such box costs 60 000 euros. The younger wine
is on top, the older is below.
Before Christmas the warehouse gets empty...
1-2 bottles of wine a week are good for health.
